Baba Ganoush

Eggplants are in season and at their best right now, making this the perfect time to prepare a fresh bowl of baba ganoush. This Middle Eastern classic is a silky, smoky dip that is both simple to prepare and wonderfully versatile. It can be enjoyed as a light starter, as a nourishing snack in the middle of the day, or as a side dish that pairs beautifully with grilled meats, fish, or roasted vegetables. Ingredients

  • 2 medium eggplants
  • 2 tablespoons tahini
  • 2 tablespoons freshly squeezed lemon juice
  • 1 garlic clove, minced
  • 2 tablespoons extra virgin olive oil
  • Pinch of sea salt
  • Fresh parsley and paprika to garnish (optional)

Method

  • Preheat oven to 200°C.
  • Prick the eggplants with a fork and roast for 35–40 minutes until the skin is charred and the flesh is soft.
  • Allow the eggplants to cool, then scoop out the flesh and discard the skins.
  • Place the flesh in a food processor with tahini, lemon juice, garlic, olive oil and salt. Blend until smooth and creamy.
  • Adjust seasoning to taste – add more lemon for tang or more tahini for a richer texture.
  • Spoon into a serving bowl, drizzle with olive oil and garnish with parsley or paprika if desired.
