Christmas Granola

If you have never made your own granola now is the time to start.  This Christmas-themed granola makes a delicious and healthy breakfast or snack.  Around the holiday season it also makes the perfect gift.

The cranberries and pistachios give the granola a festive look while the orange zest, ginger and cinnamon provide the Christmas flavours.

And of course, it is packed with protein, good fats, fibre, vitamins, and minerals.

Ingredients

¼ cup of melted coconut oil, MCT oil or cold-pressed macadamia nut oil

⅓ cup of maple syrup

1 large orange zested

3 cups of rolled oats or rolled quinoa for a gluten-free version

1 cup of shelled (non-salted) pistachios, roughly chopped

½ a cup of dried cranberries

3 tablespoons of raw walnuts, roughly chopped

3 tablespoons of pumpkin seeds, roughly chopped

1 – 2 teaspoons of cinnamon

1/4 – 1/2 a teaspoon of dried ginger

Instructions

Preheat oven to 120º C and line a baking tray with baking paper.

Combine all of the ingredients in a large bowl and ensure they are evenly covered with the oil and maple syrup.

Spread the mixture evenly on the tray

Bake for about 45-60 minutes.  The longer it bakes the crunchier it gets

Turn the mixture approximately halfway through the cooking time

Remove from the oven and allow to cool

This granola will stay fresh for approximately 3 weeks in an airtight container.

Place in a jar and add some decorations to make healthy gifts this holiday season.
