Simple detox salad with lemon dressing

Roughly chop:

  • 1 large red or yellow capsicum
  • ¼ of a red cabbage
  • 3 radishes
  • 1 carrot
  • 1 small head of broccoli
  • 2 small cucumbers
  • ½ a cup of coriander or mint
  • 3 tablespoons of raw cashew nuts or walnuts
  • 1 tablespoon of sesame seeds.
  • 1 ripe avocado

Add the following to a clean jar with a screw top lid:

  • ¼ cup of extra virgin olive oil
  • ¼ freshly squeezed lemon juice
  • The grated rind of ½ a lemon
  • Pinch of salt

Shake until combined.

Pour onto your detox salad just before eating!
