These lemon bliss balls are a lovely afternoon energy boost or satisfying after dinner sweet treat.
Cashew nuts are an excellent source of fibre, protein and healthy fats. They are also a good source of copper, magnesium, and manganese which are important for energy production, brain health, immunity, and bone health. Cashew nuts are rich in the amino acid tryptophan which is a precursor to melatonin, our sleep hormone, and serotonin, important for good mood.
Coconut is rich in medium chain triglycerides, MCT’s which have been shown to have a number of health benefits including balancing blood sugar and supporting cognition and a healthy brain. Shredded coconut is also a good source of insoluble fibre which is good for our gut health.
1 cup raw cashew nuts
1 cup shredded coconut
The zest of one large organic lemon
The juice of half a lemon
¼ of a teaspoon of natural vanilla extract
Tiny pinch of salt (optional)
2 tablespoon maple syrup
Extra desiccated coconut for rolling in
Place the ingredients into your processor in the order listed above and blitz until the mixture resembles sticky crumbs, be careful not to over blend or the nuts will turn to nut butter.
Shape 1 teaspoon of the mixture into a small ball and roll in the extra coconut. Repeat with remainder of the ingredients and refrigerate until ready to eat.
Alternately put all of the mixture into a baking tray and press firmly with your clean hands or the back of a spoon, refrigerate and cut into squares.
