This is a perfect summer salad filled with colourful ingredients that are great for your health.   

Bitter leaves like radicchio are important for our liver health and they promote healthy digestion.  I like my clients to eat bitter leaves daily. If you don’t like radicchio or it is out of season, you can use rocket, cos lettuce or water cress instead. 

The fresh orange adds a sweetness which balances the bitterness of the leaves and the aniseed flavour of the raw fennel.  

This salad is also full of healthy fats with the the inclusion of macadamia nuts, olive and extra virgin olive oil.

This recipe serves 8-10 as a side dish.


1 small head of radicchio, thinly sliced

1medium-sized fennel bulb, thinly sliced

2 oranges, peeled and segmented

Fronds from the fennel for decoration and flavour

1/4 cup chopped macadamia nuts

1/4 cup of green olives

For the Dressing:

3 tablespoons extra-virgin olive oil

2 tablespoons fresh orange juice

1 tablespoon balsamic vinegar

1 teaspoon Dijon mustard

Salt and pepper to taste

1. Prepare the Ingredients:

Wash and dry the radicchio, fennel, and parsley.

Cut off the root end of the radicchio and remove any wilted outer leaves. Cut the head in half and thinly slice it.

Trim the stalks and feathery fronds from the fennel bulb, cut it in half, and thinly slice it.

Peel and segment the oranges, removing any seeds.

Make the Dressing:

In a small bowl, whisk together the extra-virgin olive oil, fresh orange juice, balsamic vinegar, Dijon mustard, salt, and pepper. Adjust the seasoning to taste.

Assemble the Salad:

In a large salad bowl, combine the sliced radicchio, fennel, and orange segments.

Drizzle the dressing over the salad and toss gently to coat the ingredients evenly.

Add Finishing Touches:

Sprinkle the fennel fronds, olives and macadamia nuts on top.

Toss the salad once more just before serving to ensure all ingredients are well combined.

This radicchio, fennel, and orange salad offers a delightful combination of flavours and textures – the bitterness of radicchio, the crispness of fennel, the sweetness of oranges, and the crunch of macadamia nuts.
