This quick salad is great for lunchboxes or a side with dinner. Kids love making the spirals and eating them.
Carrots are an excellent source of fibre, vitamin C and beta-carotene. Beta-carotene is an antioxidant that converts to Vitamin A in the body, it is essential for eye health, skin health, gut health and cognitive function. The addition of olive oil to this salad increases our body’s ability to convert the beta-carotene to Vitamin A thereby improving the nutrition of the meal.
2-3 large carrots
Juice of half a lemon
1-2 tablespoons of extra virgin olive oil
1 tablespoon of sultanas
1 tablespoon of pumpkin seeds, chopped or whole
2-3 tablespoons of parsley
Optional ingredients you might like to try include:
Spiralize 2-3 large carrots (or other vegetables), alternatively you can grate then if you don’t have a spiralizer.
Add to a bowl with all of the other ingredients and enjoy.
If you want to prepare this ahead, don’t add the lemon juice, oil and herbs until you are ready to eat, or approximately 30 minutes before hand.
