Stewed apples with cinnamon and flaxseed

Stewed apples with cinnamon and flaxseed are exceptionally good for your gut health. Adding a few extra ingredients to create stewed apples with cinnamon and flaxseed is a great way to increase easily digestible fibre.  They also taste delicious. 

Add these stewed apples to yoghurt and granola or put them on top of your oats for a quick and easy breakfast or top with coconut custard for a secretly healthy dessert.

I make a large batch on the weekend so they are handy during the week. 


2 apples (green apples are best, but you can use whatever you have available)

1 cinnamon stick 

1 vanilla pod

1-2 teaspoons of flaxseed meal

½ a cup of water 


Peel and core the apples and roughly chop (don’t throw away the peel) 

Halve the vanilla pod and scrap out the seeds 

Place apple, peel, cinnamon, vanilla seeds and pod, and flaxseed meal into a medium saucepan and add half a cup of water. 

Cover with the saucepan lid and simmer until the apple is tender, approximately 10 minutes, but keep checking to ensure the apple doesn’t stick to the saucepan. 

Allow to cool then remove the cinnamon, vanilla pod and apple peel and discard.

Enjoy warm or place in an airtight container in the fridge.  It will last up to 5 days.
